Herbed Cottage Cheese and Prosciutto Flatbread
These flatbread slices make delicious appetizers. Serve with a chilled white wine or bubbly Prosecco.
2 Tbsp. olive oil
2 Tbsp. cornmeal
1 lb. pizza dough
1 cup Nordica® Cottage Cheese
1 clove garlic, minced
1 Tbsp. chopped fresh basil
1 Tbsp. chopped fresh parsley
¼ tsp. pepper
½ cup coarsely grated Parmesan cheese
½ cup sautéed onions
1 cup halved cherry tomatoes
3 oz. thinly sliced prosciutto
Pinch hot pepper flakes (optional)
12 fresh basil leaves, torn
- Preheat oven to 425°F. Lightly grease two baking sheets with olive oil; dust each baking sheet with half of the cornmeal.
- On lightly floured surface, divide dough in half; roll out each portion into 10×6-inch rectangle, about ¼-inch thick. Transfer to baking sheets.
- Combine cottage cheese, garlic, basil, parsley and pepper; spread half over each pizza dough. Sprinkle with Parmesan cheese. Top with onions, cherry tomatoes and prosciutto; sprinkle with hot pepper flakes (if using).
- Bake for 16 to 18 minutes or until golden brown. Garnish with fresh basil. To serve, cut into slices.
Mix it up with fresh arugula, capers or sliced olives
