One-Pot Creamy Fusilli
This one-pot meal is great for nights when you want something fast, tasty and healthy.
Ingredients:
2 Tbsp. butter
2 cloves garlic, minced
1 cup finely chopped onions
¼ cup all-purpose flour
½ tsp. each salt and pepper
2 cups reduced-sodium chicken broth
2 cups milk
1 box (12 oz). fusilli
1 cup chopped asparagus
1 cup frozen peas, thawed
1 cup Nordica® Lowfat Cottage Cheese
1 Tbsp. chopped fresh parsley
1 tsp. finely grated lemon zest
½ cup shaved Parmesan cheese
Pinch freshly cracked pepper
Instructions:
- Melt butter in large saucepan set over medium heat; sauté garlic and onions for 3 to 5 minutes or until onions are softened and golden. Stir in flour, salt and pepper; cook for 1 minute.
- Whisk in broth and milk; bring to boil. Add fusilli; boil, stirring, for 4 minutes. Add asparagus; cook for about 6 minutes or until pasta is al dente. Stir in peas and cook for about 1 minute or until heated through.
- Remove from heat; stir in cottage cheese, parsley and lemon zest. Top with shaved Parmesan cheese and cracked pepper.
For even more protein, add diced deli ham or cooked shrimp to this dish
